Pepper jelly! I use the ball pepper jelly canning recipe and modify it slightly by blending my peppers into a smoothie mixture. I use 4 1/2 cups of finely chopped peppers. I cook them until their soft and then I blend them up in the blender into a smoothie consistency. This makes it more like a jam instead of a jelly. Pour it in a pot and add the vinegar.
