I mixed my dough at night and left to proof overnight, about 14 hrs, shaped in the morning, left to rise again for another 2 hours then cooked. 300g flour (2 1/2 cup) 5g salt (tsp) 25g active sourdough starter 150/160ml water If you want it to proof faster, use 50g starter and slightly less water
